Red Beans and Greens Salad

Episode: 30 Minute Spaghetti Western


1 cup chunky prepared salsa, such as chipotle salsa

2 tablespoons extra-virgin olive oil, eyeball it

1 head escarole, chopped into small bite size pieces

1 (14-ounce) can red kidney beans, drained

1/2 red onion, chopped

Salt and pepper

First whisk salsa and olive oil together in a large bowl. Then combine salad ingredients in the bowl, toss and adjust seasoning.


I saw the above recipe on 30 Minute Meals a few days ago. It looked simple and delicious enough for me to try myself. I put my own spin on it by using chicken instead of kidney beans. I also chopped up some cucumbers and added some cheese. Can we say yuuummmmy!
